Welcome to Baldeneysee - once a region where the heart beat deep in the earth, making the cuisine more varied than in few other places. The Benedictines in the Old Abbey of Werden brought their knowledge of ingredients and preparation to the Ruhr Valley as early as the 12th century. Later, not only was coal mined in the mining region, but an incomparable treasure trove of flavors, stories and cultures was also unearthed. Here, Ruhr Valley classics meet Mediterranean components: spicy kale stews meet fragrant garlic pans, Mettwurst sausage meets oregano.

The recipe section on Baldeneysee.Ruhr is a tribute to this living diversity - to the hard-working hands of the miners as well as to the warmth of the guest worker families from Italy, Greece, Turkey, Poland or Spain. Their spices, techniques and joie de vivre have transformed regional cuisine in the Ruhr region in a unique way and given it a globally unique, international sound.
Wild growing ingredients
But we are digging even deeper: in addition to classic, traditional dishes, we also want to shine the light on the treasures of nature around the Baldeneysee and the Ruhr Valley - wild herbs, regional superfoods, forgotten ingredients. They inspire healthy, sustainable and unimaginably delicious dishes that are not only good for the body, but also for the region. What doesn't grow wild is grown in our own garden or on rented fields and by farmers on the Ruhr heights and is available in farm stores and local supermarkets.
